Ingredients:

  • 4 boneless, skinless chicken thighs
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 tomatoes, chopped
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions:
